Life

I truly suck at keeping up with this thing...I had such high hopes for all of my posts that were inevitable...whoops. Between job searching, tending bar, spending time with Ella and her tumor, Ted and friends, gardening, canning, visiting family and the various household chores...my blog suffers BIG time. We are well...Ella starts kindergarten this year and I hope to start a new job sometime around there as well...cabin with the family next week...til next time, whenever that may be.

It's Friday....

So I still haven't made the pot roast I have been craving...and I will...but last night I baked some really great fresh tilapia in white wine and lemon. We had a simple salad and parmasan pasta along with it and it was really pretty good. I will repeat this recipe again. Sometimes, basic is best. Should taken a picture...I will have to be better at that.

We attempted to go to the circus today, once we drive 45 minutes to get there, sat in the parking structure for 30 minutes and waited in line for another 40 minutes just to get up to the window and see a sign that said..."Sold Out"...bummer. We bought tickets for tomorrow...take two.

Sunday Sunday Sunday

So I had every intention of making a pot roast this weekend, but I ended up working at the bar Friday night, Saturday all day until 5 and I work tonight....so....no pot roast yet. But Ted and I learned a new recipe last night when we had friends over to hang out...Buffalo Chicken dip. So good...so not good for you...but last night, no one cared. Cream cheese, hot sauce (Frank's), ranch, mozzarella, and chicken. Dip your tortilla chip in and...MMMMMMMMMM MMMMMMM Good. Goes great with beer too!

Still no cooking...

I still haven't cooked any amazing new recipes BUT....8 miles at the gym today! Up from 4.5. It was a good day. Ella played at Kids Korner while Mom got sweaty, her words, not mine. Then we went to the Dr. for her blood work--not her favorite thing in the world to do--but we can get the ball rolling on her lymphangioma treatment and hopefully it won't screw up her swimming lesson schedule. For two girls without job/school....we are staying pretty busy. Hopefully I will get the chance to cook this weekend. :o)

Speaking of time...

So...since I am still unemployed aside from a couple of nights at my favorite bar, slingin' drinks....I have been attempting to fill my time. I joined a gym, got Ella signed up for swimming lessons and now, inspired by a movie I watched recently, I am going to practice my cooking. I like to cook (LOVE to bake) and so, why not work extending what little skill I have while I have the time? I will keep you posted on my progress...as soon as I start, not tonight as Ella is getting her big girl bed tonight. Wish me (and my taste-testers) luck!
